Turnaround Tuesday

I decided when I woke up this morning that I was going to kick Tuesday and the rest of the week in the face!  And I will admit, it was WAY better than Monday.

RUN

Listened to my body and took a DOR Monday.  Slept in Tuesday morning, decided strength training isn’t a priority this week, but regaining my strength to do everything else IS.

Ran after work at Brushy Creek with AK.  Hadn’t done either in forever.  I used to run it daily, but I just got so comfortable with running out my front door and just doing sidewalk and pavement running for most of my runs.  I won’t lie, it was incredibly hard for me and it was only 4 miles.   My legs felt spent and I was SO tired.  Fingers crossed I can recover from the meds before Saturday’s long run, which to me, is the turning point in my training. 

LIFE

Life in general right now is eating me alive.  I’m buried at work and at home.  Lack of energy and sleep isn’t helping either.  1 day at a time.

FOOD

I love this time of year.  I love the different produce (current favorites are winter squashes, fall apples, PUMPKIN and pears).   Gingered-pear oats for breakfast.  I know some steer clear of sugary fruits like pears, but not I.  I didn’t gain my weight eating fresh fruits and veggies.  And I don’t eat 10 pears a day.

Lunch was Lebanese Wraps again, but a redux.  I think the guacamole spread could be improved and it would be better, maybe some fresh spinach leaves to add something.  No, I didn’t have cottage cheese on it, but I DID have cottage cheese and spiced pumpkin for a snack today ;-)   It was yum. 

Dinner, was something old, something new, something borrowed.  OLD:  garlicky green beans, NEW:  Cheeseburger Meatloaves , BORROWED:  Hot Crash Potatoes.  Recipes and photos to follow on Wednesday.

My friend Meg blogged about Crash Hot Potatoes a couple of years ago.  We tried them and LOVED them.  Been using them every so often, ever since.  We don’t eat a ton of potatoes but these are seriously good.  I once shared them on the WW message boards and people went NUTS for them.  Then earlier this week, I saw Rhodey Girl mention them as well.  If you aren’t making the hot crash, you need to start ;-)    I make mine with fresh rosemary from our front yard.  Dan isn’t a rosemary fan, so he gets fresh chives, sage, or something else.  (I’m on limited herbs right now, we had a rough summer with my patio garden).  Really wish someone would help me make a real garden, hint hint ;-)

Monday, Monday

RUN

The plan was for cross after work.  Maybe some stairmill action.  I had a rough day and could barely even drive home because I was so run-down.  I opted for rest instead.

LIFE

Keeps going downhill with the meds, calling Dr. tomorrow to ask him to take me off.  I’ve progressed to lethargy and flu-like symptoms, which are apparently not listed in the drug materials, but in patient’s reviews all over the internet :-(    Meds honestly haven’t done much yet and the side effects are killing me.  I can’t function like this all week at work and I need to get sleep.  Plus I have an important training run on Saturday and then my dad’s 60th birthday surprise Sun-Tue.

CT scan scheduled for Wednesday morning.  YUCK. 

I’ve decided no more whining or dwelling on this anymore.  Maybe an update if they ever decide what’s wrong or what to do…

FOOD

My mom had a garage sale this past weekend.  On my way through town last week, I dumped about 20 cookbooks at her house that I was getting rid of.  In the middle of pricing them, I took 2 back with me ;-)   Glad I saved this one (Cooking Light, Low-Fat, Low-Cal).  It was a Half-Price books find like 2 years ago and I guess I never really tried much out of it.  I used to have a mild addiction to cookbooks, that was before I was a blog reader, lol!  We’re trying about 6 new things out of it in the next 2 weeks. 

No photos today, because I suck.  My camera is in my gym bag for some reason, which I left at work.  Neither one of those statements makes sense.  Maybe the meds confuse me too, lol!

Monday’s lunch was Lebanese Wraps.  It’s actually not from the CL but rather from the Full Plate Diet book that I was given to review before it was published.  The recipe has promise, but needs some tweaking.  I may add some cottage cheese to it tomorrow with additional veggies.  Looks like they list most of the recipes on that website.  I have a few more marked to try at some point. 

Speaking of cottage cheese.  I decided that roasted butternut squash and sweet cottage cheese makes a nice snack or dessert :-)   Yeah, i’m strange. 

Tonight we tried this recipe from the CL book.  IT.WAS.AWESOME.  I halved it, because I hate fish leftover or reheated.

Pecan Crusted Flounder

  • 1 slice(s) bread, whole-wheat, torn
  • 3 tablespoon nuts, pecans, chopped
  • 1 teaspoon creole seasoning, salt-free
  • 1/4 teaspoon salt
  • 1 pounds fish, flounder, 4 (4-ounce) fillets  (I actually used tilapia)
  • cooking spray, butter-flavored
  • 2 tablespoon mayonnaise, nonfat
  • 1/2 teaspoon lemon juice

1. Position knife blade in food processor bowl; add first 4 ingredients. Process until mixture resembles crumbs. Set aside.

2. Place fish on a baking sheet coated with cooking spray. Combine mayonnaise and lemon juice. Brush mayonnaise mixture over top of fish. Sprinkle fish evenly with crumb mixture, and coat lightly with cooking spray. Bake at 450° for 15 minutes or until fish flakes easily when tested with a fork.

Yield: 4 servings.

If you lost weight, how did you do it?  How long have you kept it off?  How do you keep it off?

For me:

HOW I DID IT:  I lost the weight on Weight Watchers from January 2007-June 2007.  Around 35 pounds.  (I lost a little more after being at goal for 3 years). 

TIME:  Made goal June 2007, been below goal since then. 

HOW I KEEP IT OFF:

1) everything in moderation

2) I still journal everything I eat and all of my workouts

3) I still weigh weekly.  And I only weighed weekly when losing, which I highly recommend.  In fact, I threw my scale away and didn’t buy another until I made goal.

4) I always have some sort of goal I am working toward that is wellness related, but not loss related.

5) No deprivation

6) Planning and thinking ahead.  I plan what I can, i’ve learned to be flexible when I can’t.  A little planning goes a long way.  This especially applies when you have a challenging week like travel or a vacation. 

7) 2 words.  Lifestyle Change.

That’s my running “before and after”.  Left side is my first 5K in April 2006.  I had been running for 4 months, but not lost any weight.  That was about 8 months before I joined Weight Watchers in Jan 2007.

Right side is a 5K from May 2010.  I’d been at goal for almost 3 years when that was taken.  Not only does my body look better, but look at my face.  My before looks like I am dying.  My after looks HAPPY.  That’s because I am :-)

Setback Sunday :-(

RUN

I’ve been up since 4 am.  No reason, except for the fact that the meds won’t let me sleep.  GREAT.  So I started laundry, chores, and ate breakfast (chocolate-peanut butter oat bran).  Took the first dose of the meds and worked on house stuff until it was time to go to the gym just before it opened.

I hadn’t lifted since last Sunday because I was in the middle of nowhere all week.  My only workouts during the week were running and little hiking.   I felt fine up until about 20 minutes into the workout and that’s when the nausea set in :-(   REALLY?  why couldn’t it wait until I got home?  I should have waited and took the meds AFTER the workout.  That and I really shouldn’t have jinxed myself in yesterday’s blog by saying I didn’t have any yet.  I pushed through another 15 minutes and had to call it quits.  Sat in the car and drank a bottle of water to let it pass.  I still needed to get regular groceries before I went home, which I successfully did (with the help of a 2nd bottle of water).  And HEB had my gels!  YAY!  Yes, getting through the grocery trip and finding my gels was the highlight of my morning. 

I am trying to be patient and figure out the new meds and give them a chance.  Part of me would rather feel the way I have and just feel uncomfortable instead of these stupid side effects!  That and I am really hoping I get my CT scan early this week, so the Dr can see the results.  I would really like to close the chapter on “what the heck is wrong with Melissa”?

LIFE

Other than gym, shopping, and laundry (lol, sorry, this girl doesn’t do tanning and no, I don’t watch JS), it was a pretty boring day.  Wasn’t meant to be that way, but I felt like crud majority of the day.  Bummer, because during this whole ordeal, I can count on one hand how many days I really felt BAD.  Most days I just felt annoyed or a little yuck. 

I at least caught up on some DVR I missed while I was gone the last 2 weeks.  I don’t watch many shows, so it wasn’t too hard.  I’ve started dumping what I did watch, left and right, because i’ve gotten bored with most of it (Grey’s, so You think you can Dance, Biggest Loser).  I’m saving Project Runway to watch while Dan’s in Chicago for a week starting Friday.    Watched 2 episodes of Sons of Anarchy.  It’s really Dan’s show, but I got addicted to it for some odd reason.

FOOD

Met my sister in Georgetown for lunch at McAlisters.  LOVE their veggie chili and tea.  We did a little shopping, but it was almost a total fail.  I only bought some Halloween kitchen towels and she got some headbands and some Miss Meringue cookies (which are almost impossible to find here anymore). 

Trying several new recipes this week, including Lebanese wraps.  Made the recipe today, will be lunches for part of the week.  Will review and post recipe tomorrow.

Dinner is going to be Friday’s leftover pasta with Laughing Cow Alfredo sauce added to the mix with some roasted veggies.  I’m only making 1 serving of the sauce, since my pasta is already somewhat sauced, I just want to vamp it up ;-)

Laughing Cow Alfredo

  • 3 wedges of your favorite Laughing Cow (I used the new tomato and basil, but any flavor is great)
  • 1/2 cup milk
  • 1 Tbsp Parmesan cheese
  • 1/2 Tbsp Margarine or EVOO
  • 1/2 tsp garlic powder

Put all ingredients in a small sauce pan and set on low. Cook for 20 minutes or until creamy and smooth. I suggest that you stir the sauce for most of this time.
 2 servings of sauce
2 WW points per serving (sauce only)

Slow Saturday

RUN

I don’t know what the heck was up with me Friday night, because I did none of my usual ritual. In fact it’s amazing I even got out of bed.  I did, only 5 minutes after I was supposed to, only to find out that the Rangers lost after I called it a night  :-(   Not a good way to start the day.

New meds can cause restless sleep, which I had. I’ve already noted I need to take the medicine earlier in the day ( twice a day). Luckily no nausea, thank goodness.

I woke up feeling pretty rotten. Ate my “apple pie” oats and it helped a bit. Couldn’t decide what route or trail I wanted to do, I opted for Lady Bird lake, even though it’s a haul from my house. My main reasoning was the first hour would be pitch black dark. It was actually darker than normal, my eyes weren’t adjusting well at all, but I was fine. Knocked 12 mile cutback week run out at slightly faster than normal training pace.

Went to REI for gels and sure enough, they had zero tangerine.  Looks like a trip to Academy is in order for Sunday morning.

LIFE

Hit Sprouts market for some produce. Just gotta hit up HEB tomorrow for everything else. Since we are so busy the next few weeks, I’ve done rough menus out further than my usual week. Did some prep on veggies when I got home, hadn’t done that in a while, need to get back to that.

Before I knew it, time had flown and it was time to go to Mangia Pizza for the Auburn alumni club’s watch party.  Horrible game.  Can you say tons of offense and no defense?  We had the Rangers game going on at the same time.  The Rangers and Auburn both just about killed me yesterday.  Good grief!

The plan was to eat dinner there after the game, but Dan couldn’t wait, so he ordered some wings as a snack.  By time dinner time rolled around and both games were over, my stomach hurt :-(   Stupid meds.  I know it’ll take time to adjust and figure out when to take them and how I react, but I was really looking forward to some yummy pizza!  But you know, sometimes it pays to listen to your body and not have what you want, but rather what IT wants.  I don’t think it was really going to react well to cheesy goodness.

I ordered that sweater from Target online (college sweaters were their “deal of the day” a few weeks ago) and it turned out to be more Florida blue than Auburn blue.  I got teased a lot, I’ll save it for work, lol.  No more wearing it on game day.

FOOD

Tried out a pizza recipe from the October Oxygen magazine Saturday for lunch. It was good, but the making of the crust weirded me out (part of the base was ground turkey).  Little did I know that would be the only “pizza” I had yesterday.

Last night I ended up throwing together some veggie nachos when we got home (black beans, red peppers, tomato, rf cheese, mushrooms, green onions, zucchini and lots of spices).  They were good, but they weren’t pizza :-(

RUN

RNR San Antonio is a month from today.  EEK.  I’m not really getting nervous, but after seeing the weather/race report from Chicago last weekend, I can’t help but flashback to SA last year and seeing so many people going down, people suffering, and seeing the DNF rate.  Praying for good weather.  Surprisingly enough, I haven’t thought about the race, up until today, much at all.  In fact, other than training for it, I’d actually kind of put it out of my mind.  Not on purpose, just did.

Longest practice pre-race run is next weekend. 

June was talking today about post-marathon detox and scaling back on food consumption today in her blog.  I can relate to it…in years past.  For the last 7 weeks, I haven’t been eating back the calories burned in my runs for the most part.  I ALWAYS eat those, I always eat anything I burn off in workouts and then some.  But because of “mystery condition” I haven’t really been able to.  I am really praying I haven’t trashed my metabolism with all of this.  My eating has been better the last week or two, but I am still having trouble on some days, like today:-(   I don’t want to have to eat like a bird to maintain my weight.  I want things to be normal again!

Ran Friday morning before work.  Friday is usually my DOR, but after the day I had on Thursday and my late arrival at home, I decided to move the run to Friday, especially since I have a cutback tomorrow.

LIFE

Thursday started off as a decent day.  Got up early like normal, knocked some work out at the lodge (1 of 2 places to get wireless at the ranch).  When training was over things started to go downhill, we still had to train 18 people on some equipment, I went to observe and document.  Before I went down there, I asked the kitchen at the ranch, please save enough lunch food for 18 people, we’ll need a late lunch.   We get back up to the pavillion to eat and there is only enough food for 4 people!  I was livid.  We had all already paid for lunch in our stay, so 14 of us didn’t get lunch and had to find something on our way home.  Some of the staff had many hours to drive ahead of them, the last thing they wanted to do is stop for food before even getting on the road!  I felt so bad, although it wasn’t my fault.

I hit the road later than I really wanted to.  I didn’t stop for food until I got all of the way through San Antonio. On the way, I called to check on my dad’s birthday gift status at Cabelas.  I won’t go into detail, but I will say that I will never order anything from them again.  I am going to be upset if the gift isn’t here before dad’s birthday like promised.   To make matters worse, I got stuck in the normal horrible ATX traffic, still had to take my work truck to get gas, back to office, etc.  Then I got distracted once back in the office and left there really late.

Got home and found out that my car, which I got in March, is still in the shop and will likely be there another week for body work.  Not happy.  When it rains, it pours. 

Got to work super early this morning to play catch-up.  Got some done, but not enough.  I wasn’t going to stay late.  Had my Dr. followup today, he put me on new meds that are likely to make me nauseous.  Great.  And I have to get a CT scan next week.

This is my last free weekend pretty much until Christmas.  I like this time of year, I just hate things being non-st0p.  I say it’s free, but I really need to be prepping for my “in-laws” arrival the first weekend in November, because we won’t be here much before then.  Got cleaning, house projects, a run, and the Auburn-Alabama watch party tomorrow.

FOOD

My overall opinion of the food at the ranch I was at all week is a FAIL.  The only meal I liked was steak night (and I didn’t even like the steak that much, I liked the sides the most).   Chef my ass.    Not sure if the food has changed recently, but I am not sure where all of these people got the idea that the food was good.  Or maybe I am just that much of a food snob.

Grabbed Bill Miller BBQ for a very late lunch Thursday afternoon.  I’d never had their chicken sandwich before, it was pretty darn good.  I also grabbed a salad for a base for Friday’s lunch, a chicken for Thursday’s dinner, and some of their awesome beans.

Forgot said salad and my breakfast for work Friday morning.  Ended up eating some really tasteless Health Valley soup at work and ate the salad when I got home.  It was a tasty concoction of garden salad with onions, cottage cheese, salsa, a serving of the pinto beans, and some mushrooms.  Looked gross, tasted devine!

Dinner Friday night I opted to use things I had around the house.  I made my own Italian Turkey Sausage from extra lean turkey and a spice mix I threw together (pretty much italian spices, sage, some red pepper, black pepper, and some garlic).   I then made some WW pasta, tossed it with spinach, the turkey and some Hombres Sassy Spinach DipMix.  It was pretty darn awesome.  Found their dips (Bastrop Texas based company) at Tears of Joy Hot Sauce shop on 6th street in downtown Austin.  They also sell online.  Served it up with three color french green beans and garlic bread (Dan and I eat different bread types) with Johnnys Garlic Spread that I got from Costco (thanks for the head’s up Janetha!).

Things I like Thursday: RUNNING

Shoe of choice-Asics Kayano.

I got fitted for these years ago and they still come up on my fittings as “my shoe”.  I had some NB and Saucony suggestions this last go round too, but Kayanos have been very good to me.  I just wish they were better on the pocket book.  Sometimes I get them for a deal, but the last pair I bought were regular price :-(   Luckily I had a great coupon!

 

Sports bra of choice-Shock Absorber.

I used to buy these at Victoria’s Secret of all places and they were available in many styles and colors.  Then they decided to discontinue them.   I may be small-chested, but I want NO bounce what-so-ever, these do the trick.  They are very pricey online however.  Sometimes catch a deal here or there, but for the most part, even though they are my choice, i’ve phased them out a bit because they are so expensive.

 

How I measure my runs~Garmin Forerunner 405

I originally started out with a 301 which I liked, but was big.  Then 2 years ago, Dan bought me this bad-boy as a “Happy First Marathon” gift.  It’s a cool toy.  Does more than the 301 and it’s a better size and shape.  However, it has software flaws, you have to make sure it’s locked when in use (especially if sweating), and the worst thing about it, the formula for calories burned is very much off.  It calculates calories burned with a distance component…which has NOTHING to do with how many calories you burn.  For me, it’s about 30-40 calories per mile off.  And yes, I know this because I have worn it many times at the same time as my Polar.

When I want to just go run by “feel” I wear~Polar F6 Heart Rate Monitor

I love my Polar, I wear it for cross-training, strength-training, and on shorter runs.  It seems to be alot more accurate than the Garmin as far as actual calories burned.  Plus certain models of the Polar, including this one are coded to prevent “cross-talk” from other machines or HRM near you.  (i’ve found though, I need to sync the watch and strap away from anyone or anything though for this to be true).  Good gadget and if you need to buy 1 workout item other than shoes, i’d go for something like this.

During run fuel~Powerbar Gels

I’ve experimented with all types of gels, gummies, blocks, candy, beans, etc.  These are my favorite.  I tried them when training for RNR SA 2008 because it was the on-course nutrition that year and I wanted to make sure I could stomach them if I had to take some off the course that I didn’t bring.  Apparently my stomach isn’t picky when it comes to that kind of thing.  The Powerbar brand is thinner than some of the other brands and goes down easier, which is another reason I prefer it.

I like the tangerine because it’s fruity and has 2X caffeine in it.  I also like the apple which is 1X caffeine.  The strawberry-banana and raspberry creme are also decent, but I don’t think the raspberry has caffeine.  I’m not sure the caffeine makes a darn bit of difference.  Around here the tangerine can be hard to find, apparently from talking to the people at Academy and REI, people buy it by the box (it’s cheaper that way too).  Which reminds me, I need to pick up a box, i’m almost out.

Post run recovery~Starbucks

This may seem weird to some people.  But the usual training routine is run, stretch and shower at the Gold’s downtown.  Across the street is Starbucks.  Some sort of latte is usually consumed after said runs.  They say chocolate milk is great for recovery, a latte isn’t too far from that, minus it being hot and having more caffeine (which isn’t the greatest for recovery).  I sound like a caffeine junky, but I swear I’m not.

My buddy June from Houston turned me onto this stuff.  I found it for the best price at Dick’s Sporting goods.  Works like a charm.  I wash my running clothes in this in my machine and then line dry.

Greetings from the Cowboy Capital of the World!

RUN

Well because I didn’t pack a blowdryer, my morning plans changed a bit.  You see, I never pack one because hotels always have one.  I leave one in my gym bag for the occasions when I know I won’t have one.

Ok, so dude ranches don’t have blowdryers.  So I decided to get to the local grocery store when it opened at 7 to buy one.  Granted, this is the same small town grocery my parents have where they live.  I knew that my choices are limited, if they even had anything.  I ended up getting one for the bargain price of $40, but at least I didn’t have to have wet hair all day long.

While I was waiting for the grocery store to open, I ran through downtown Bandera.  It’s pretty small, smaller than I remembered.  So I ran it twice each way.  Since my Garmin went dead in my bag (how I don’t know, because it was locked), I based my miles on my time on my Polar.  I’m guessing about 3 miles.  Good enough for me.  It was still pitch black dark outside when I got done with the run and the blowdryer trip.

Didn’t know all of the runners were running after training today.  Oh well, maybe I’ll do that tomorrow.  I always shoot for the mornings when I can, especially when I don’t know my evening schedule.

FUN/LIFE

Training was ok.  Some of the talks were interesting, some, not so much.  The rest of the week should be a little more exciting on the work-related front.  It is good to see people I don’t get to see often from all over the state.  That and meeting people I only ever talk on the phone to.  I stink at names and faces, so I really struggle when someone isn’t wearing a nametag.

FOOD

Breakfast was disappointing.   They had a large spread, but nothing I would really eat other than yogurt and fruit.  I am so picky when it comes to breakfast out, I’ll admit that.  I mix it up at home, especially on the weekends.  I am just not a fan of most breakfast food served at buffets.  I very rarely take my own food, but I do have a stash of instant oats in the car, I may bust that out tomorrow if the spread is the same or similar.  Fruit and yogurt does not hold me long at all.  And if there is anything I’ve learned, skimping on breakfast throws my body and hunger signals out of whack for the day.  Not that I need anything with hunger signals to be more out of whack these days! 

 

Lunch was kind of odd, with 2 completely unrelated cuisines.  It was a weird combo of home cooking with meatloaf, beans, potato salad, garden salad, and slaw.  And then oriental food with white rice, stirfry, and eggrolls.  I mixed it up with beans, garden salad, and stirfry.  It was ok I guess. 

 

Dinner made up for the rest of day for sure.  Hayride down to “Hicktown” for steak, fresh raw veggies, salads, potatoes, asparagus, sautéed mushrooms and onions, then cobbler and ice cream for dessert.  I tried a little of everything, minus the cobbler.  Ended up giving one of the guys half my steak.  I LOVE steak (don’t have it much though), but because of my “mystery illness” I just can’t eat as much as normal, but the good news is, I am A LOT closer to normal than I was before.  The meds the Dr. gave me have helped a bit.  I go back Friday morning.  As if I don’t have enough to do playing catch-up from being gone from work for trainings the last 2 weeks, I also have my follow-up appointment with the doctor in the middle of Friday morning..  I had originally taken an appointment late next week, but when my boss found out I took a later appointment because of me being worried about playing catch-up, she ordered that I change the appointment to Friday.  So I did.

Live music every night!  Even some dancing!

And a peacock came to visit me, along with lots of deer. 

Definately enjoying the scenery and nature :-)   Half the training Wednesday is outdoors, REALLY looking forward to that!

Too bad there is quite a bit of work to be done and lots of talks and presentations….all day long.  But the mornings and evenings should be great. 

FOOD

The chef here is supposed to be awesome, I hope so!  Tonight’s dinner was good, but I would be really upset if I was vegetarian (they had potato salad, coleslaw, beans, and some green chile egg thing, plus the bbq fixings like jalapenos, onions, etc).   I really don’t eat potato salad or coleslaw unless I make it, so I skipped that.   I had lean brisket, beans, pickles, onions, veggies, and a little fresh hot bread (lady pulled it out of the pans in front of us)  Dinner was complete with hay-ride down to the river for the meal!

I always worry when I go to things like this where all meals are included, because I am kind of snobby when it comes to food.  Last year at a similar resort, it was fine.  I have a few snacks just in case (good thing, because the conference room snacks are crap).  I’m sure it’ll all be great and delicious. 

Breakfast isn’t til 8, so not sure what i’ll do until then, especially since the sun doesn’t come up til 7:40.  I have no flashlight and we’re in the middle of nowhere.  Morning runs probably will not occur.  I did however, run today at my parent’s house before I left to come here.  I’ll fit it in where I can.  Best thing about this training is that my coworkers from all over the state are here and half of them are runners!  I hear the trails and roads here are beautiful.  Today i’ve already seen a ton of deer, some turkeys, and a few peacocks.  Will try to take photos, even though I really stink at remembering.

Clean out the fridge!

RUN

I got up on Saturday to run and felt fine, then hopped in the car and started driving.  On the way, I started feeling pretty bad, my stomach was killing me.  I considered turning around, but I kept driving on.  I decided to try to run.  SO glad I did!  My 20 miler went awesome.  One of the best training runs i’ve ever had.  If I can knock out the last 10K that went during the real deal, I’ll be a happy girl. 

Sunday I couldn’t sleep in, although I tried.  I woke up at 5 and stayed up.  Did laundry, chores, got to the gym when it opened.   Did upper body with a tiny bit of legs, although I felt great, I didn’t want to hinder my recovery from the long run.  I came home and packed for my work trip.  It was nice to have a low key weekend, especially between two weeks of travel.

FOOD

My fridge was looking sparse, i’d been out of town for a week, but getting ready to leave again.  Needed to use some things up and I was pretty beat from going non-stop all week and having a big run..

Friday night Dan was going to ACL  after-parties with some friends, I needed to rest of for the big long run on Saturday morning.  I decided to try something i’d dreamed up similar to the Green Chile Mac and Cheese at Moonshine.  I took a serving of Poblano and Corn soup out of the freezer, thawed, and then reduced it on the stovetop to make it more of a cream sauce.  Tossed that with some cooked zucchini, leftover chicken breast, and 2 oz of pasta and added a serving of cheese.  Viola!

It was tasty.  Less cheesy than Moonshine’s, but still very good.  I think it would be great without meat or maybe even good with some pinto or black beans tossed in.

Here is the original soup recipe:

Spicy Poblano and Corn Soup

1 (16-oz.) pkg frozen baby gold and white corn (such as Birds Eye), thawed and divided
2 cups fat-free milk, divided
4 poblano chiles, seeded and chopped (about 1 pound) 
1 cup chopped onion
1 T. water
3/4 tsp. salt
1/2 cup (2 oz) reduced-fat shredded sharp cheddar cheese

1. Place 1 cup corn and 1 1/2 cups milk in a Dutch oven. Bring mixture to a boil over medium heat.

2. Combine chopped chile, onion, and 1 tablespoon water in a microwave-safe bowl. Cover and microwave at HIGH 4 minutes.

3. Meanwhile, place 2 cups corn and 1/2 cup milk in a blender; process until smooth. Add pureed mixture to corn mixture in pan. Stir in chile mixture and salt, and cook 6 minutes over medium heat. Ladle soup into bowls, and top each serving with 2 tablespoons cheddar cheese. Yield: 4 servings (serving size: about 1 1/3 cups soup and 2 tablespoons cheese).

*I used green chiles instead of poblanos.  If you chose to freeze, do so without the cheese, add it when it’s served.

 

Then Sunday I made a “dump salad”.  Romaine, tomatoes, spicy chickpeas, mushrooms, yellow squash, zucchini, and cottage cheese.  YUM!  Wasn’t pretty, but it sure tasted good.
