Recipe Review: Honey Garlic Chicken

This was so easy!  I actually combined everything and froze it, wrote the directions on the freezer bag.  Pulled it out and thawed when I was ready to make.  Turned out GREAT!  Loved it. 

1 1/2 to 2 pounds boneless, skinless chicken thighs (4 or one thigh per family member)
3 garlic cloves, smashed and chopped
1 teaspoon dried basil
1/2 cup soy sauce (La Choy or Tamari wheat-free are gluten free)
1/2 cup ketchup
1/3 cup honey
Use a 4-quart slow cooker (if using a 6-quart, this will cook faster. Check after 3 hours on high, 5 hours on low).

Put the chicken into your cooker. In a small bowl, combine the rest of the ingredients, then pour evenly over the top.
Cook on low for 6 hours or high for 3-4 (I’d go with low—).
Serve with  rice and steamed or roasted vegetables.

I actually used breasts instead of thighs.  Not that I wouldn’t use them, but chicken breasts were on hand.  In fact, that’s what I loved, when I put this together, I had everything on hand (and usually do).  Served over rice, topped with green onions.  Mine also had veggies in the bowl, I knew Dan would eat around them, so I didn’t bother adding them to his.

Easter Blessings

Dan and I haven’t done traditional Easter celebrations for the last few years.    Last year we attended a baseball game.  This year we decided to have brunch with some of our Austin friends down south.

Hit the gym first, which was nice and empty.  My calves are knotty again :-(  I am going to blame that on why for the first time EVER, I lost my balance on the Bosu and had to jump off ;-)  I foam rolled after that, but what it really needs is Trigger Point.

Then it was off to Heather’s house.  Dan had to wake up earlier than noon, lol!  He a good sport about it though and was a huge help prepping the salad for me while I made the guacamole (this took forever, we added a ton of stuff to the salad).  He is so precise and good at chopping, I need to recruit him more.  The guacamole which was a kit from HEB was very spicy and chunky (which I loved).  Glad I bought 4 of them and froze the others.

We all brought a few things, but Heather really outdid herself!  We had tons of different dipping options, dips, 2 kinds of REALLY spicy guacamole, 2 different types of hummus, veggies, pickled veggies, and more!  I think I ate most of that pickled okra ;-)  And she got Baby Zach’s hummus and some gluten free options for dippers!  

Steak and lemon-rosemary chicken for the main dish.

I loved that chicken.  Grilled veggies are like crack, that’s why they are spilling all over my plate.

Fun filled Easter.  Dan and Devon are in the living room, along with my mega plate.

Cookies and cream ice cream cake for Dan’s birthday for dessert.  HUMPF!  He just had to pick a flavor of ice cream I can’t eat.

Had a great time!  Good call on whoever decided we needed to have a get-together.  Hopefully in the near future we’ll have a deck added to our house and be able to host outdoor fun.  We just need to convince everyone to drive up to where we live ;-)

She said we could take leftovers home.  I hope I left enough for our other friends, I didn’t want to make dinner Sunday night OR lunch on Monday.

We’d planned on driving up to Florence after that (hour away) to meet his coworker and his family for some target practice, but we left too late.  Instead Dan took a nap and studied for his test.  I did laundry, extra-curricular activity work, and cleaned.  I tried to pack for our trip, but I ended up with a mess on my bed instead.

Not sure where the evening went, before I knew it, it was time for bed!  Great weekend for sure :-)

Adventures in sushi

We ventured to Uchiko for Dan’s birthday dinner.  He said he wanted sushi, so I gave him sushi.

You know, it’s just a little joint in Central Austin that just happens to be owned by Tyson Cole, Austin’s first James Beard winner and where Paul Qui, Top Chef winner is the head chef ;-)

While we waited to be seated, we hung out on their fun patio.  We got there early.  They open at 5 and they only take a handful of reservations a night and I couldn’t get one a week ago, so we opted to just wait.  My friend was right, get there before 6 and you will get in within an hour or so if you have only 2-4 people.

Adventures in sake, Dan’s first time.  I know NOTHING about sake.

I will say that I giggled.

Grilled edamame.  It’s GOOD.  Who would have thought grilling it would enhance the flavor so much?  And the smoke from the wood was great.  I want to grill some at home soon ;-)

I opted for first available, which ended up being at the sushi bar.  I loved being able to watch and ask questions.  I am sure John, our sushi chef, was starting to be annoyed by me asking questions about what he was making.  No, I didn’t ask if Tyson or Paul were around.

I figure Paul was exhausted from it being Paul Qui day in Austin the day before ;-)

#1 thing ordered on the menu?  Crispy Brussels sprouts.  They were amazing!  I have no idea what they did to them, but they were terrific.  I would say almost every table had at least one dish of these.

My favorite thing other than the sprouts, the hama chili, which is yel­low­tail sashimi, sliced thai chili, orange supremes.  I wanted to eat a pound of this and I didn’t want to share with Dan.  It was heavenly.

I’ve always wanted to do hot rock!  Apparently most of my friends have never heard of it, I guess I read and watch too much food stuff, ha!  Hot rock  “sear it your­self” wagyu beef, japanese river rock.

That was fun and delicious.  But both of us need chop-stick classes I think!

Two pieces of tuna sushi for Dan.  He scarfed it down before I even got photos.  He said it was so good that it almost melted in his mouth.

Once piece of hamachi for me.  Hamachi japanese yellow­tail, pickled green apple,  jalapeño.  I loved this, but because I stink with chopsticks, I didn’t get the pickled apple in the first bite attempt because I dropped it (faux paux, I picked it up with my fingers to make sure I got all of the flavors in my mouth, ha!)

Crunchy tuna for Dan.  crunchy tuna big eye tuna, avocado, jalapeño, english cucumber, aioli.  Dan loved it.  The sauces looked good to, one looked like thai chili, the other was the aioli.  Not gluten free :-(

No soy sauce here!  It’s on the table, but the chef will tell you right away, NO SOY SAUCE.  Funny because I know Dan was going to reach for it before even tasting.

This food was so good and flavorful, I can’t believe they even have it on the table!  I wouldn’t dream of putting soy sauce (nevermind the fact that most isn’t gluten-free) on this food!

Not the best photo of us, but I made him take one when we were leaving.  We will be back!  I think next time we’ll try to get there for happy hour.

Things I like Thursday: Groupon

I LOVE Groupon.  I’ve been buying them for almost 3 years now.  Started out with just restaurants, then some services.  Haven’t tapped into the vacations or any of the other areas.  I’ve learned to hold back, so I don’t get too many to spend, especially for places that are in downtown or south Austin.

I will say though, that I got the app for my phone last month and it’s been a lot less exciting.  Maybe it’s just because there are like 40 options a day and most of them aren’t that exciting to me.

I did have 2 Groupon fails lately though. I bought a “dark chocolate-shellac pedicure” back before Christmas, that I was saving for next week.  I went to book an appointment last week, so that i’d have pretty feet for my next trip.  no luck :-(  They have no appointments for 3 weeks.  Oh well, guess I’ll have to go to the place near my house.  Guess I will book that one for sometime in May.  It WILL get used.

Then yesterday I went to spent the Whole Bite Groupon i’d bought (expires next Wednesday).  It’s like My Fit Foods or Snap Kitchen.  Healthy, pre-made, portioned meals.  I’d been saving this one for a crazy week where I needed something quick.    I went ahead and ordered my food on-line Thursday morning.  I ordered tilapia, Mexican lime chicken, and buffalo chili.  I opted for the regular size and not the big portions, thinking the regular was a good size for us.

It sounded great.  Buffalo chili for Dan for Thursday night dinner with the Lime chicken for me.  Was planning on saving the fish for Good Friday.

What I didn’t bargain on was quite how SMALL the portions were.  Who eats that much for a meal?  They were seriously snack sized.  

They were so small, I had to use them in ingredients in a full meal.  I poured my chicken, asparagus, and quinoa over a full bag of salad for myself.  Dan’s chili was morphed into chalupas with some cheese and veggies added.

The fish?  Yeah, that was a post-workout snack.  Oh well!  At least I got something out of it, won’t be shopping there again, not impressed.  I’m better off eating my own quick and easy meals ive stashed in my freezer myself!

Just finished looking at today’s Groupons.  Nothing I can’t live without ;-)

WHEW!

I am so ready for life to slow down.  For over a month now i’ve been go-go-go!  Lots of travel, lots of strange beds, lots of eating out.  I can handle them all, but they get tiring after a while.

I am staying put in the ATX until April 14th!  No travel for Easter, nothing.

On the Dr./health front, nothing.  The Dr. in Houston was sending test results to Austin Dr.  I never heard from either of them again.  Not very happy with the way that’s all panned out.

No races planned right now, Thin Mint Sprint was the only thing I signed up for and that was mostly because it benefited my Girl Scout Service Unit and one of the troops in it.  Not training for anything right now.

I have a meeting tonight after work and then hopefully it’s smooth sailing right into the weekend :-)  I would like to catch up on my DVR, work in my yard (which I haven’t done this year), and relax :-)

Resurfacing

I’m still alive, I swear.  

Food poisoning Monday which led to me being sick Monday night, Tuesday, and Wednesday.  Worked half a day Wednesday, then flew out to San Francisco area Thursday through Monday afternoon.  

Back now.  Car issues this morning which caused me to miss my workout.  Swamped at work, today is Dan’s birthday, and I have a mountain of work at home and at work.

Hopefully tomorrow will provide a bit of normalcy for me ;-)
